Apple and Berry Crisp

Ingredients:

2 large or 4 medium apples
6 cups of berries (I used frozen strawberries, raspberries and blue berries)  You can use any combination!
1/2 tsp cinnamon
1/4 tsp nutmeg

Topping ingredients:

1 cup oat flour
3 Tbls coconut sugar
2 cups oats
5 Tbls nut butter (you can us 2 Tbls coconut oil, but I don't have oil in my house)
5 Tbls pure maple syrup

Instructions:

Preheat oven to 400 degrees

If you don't have oat flour, you can make your own by putting 1 cup of oats in the blender and blending until you have flour, which is what I did.  Add this to a bowl with the rest of the oats, cinnamon and nutmeg.   Mix until it's combined.

Add the nut butter, and mix thoroughly with your hands.  Then add the maple syrup and mix until sticky and combined.

Spread out on a cookie sheet, lined with parchment paper.  Bake for 10 minutes.

While crisp is baking, peel apples and cut into chunks.  Add them to a pot with the cinnamon and nutmeg.

Cook them with a splash of water until they are a bit soft.

Add in the berries, and I also added 1 Tbls of cornstarch mixed with water because my berries were from the freezer and they were a bit watery.  Cook them until they are hot and saucy!

Place the fruit in a baking dish, and when the crisp comes out sprinkle on top of the fruit, and bake for another 15 minutes.

I added a bit of coconut yogurt on top, but it would be good with homemade banana ice cream as well!  I just didn't want to make it because I wanted this right out of the oven!  So so good!
