Aquafaba Brownies

Ingredients:

Aquafaba Mix

1/2 cup aquafaba (liquid from chickpea in the cans)
1/4 tsp cream of tartar

With a mixer, whip it for about 10 minutes until soft peaks form

In a separate bowl mix:

1 cup of gluten free flour - send through a mesh shifter
1/2 cup cocoa  - send through a mesh shifter
Add:
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

In the food processor mix:

1 cup of pitted dates (packed)
1/2 cup applesauce
1/2 cup pure maple syrup
3 Tbls nut butter
1 tsp. vanilla extract
1 tsp. apple cider vinegar

Instructions:

Preheat oven to 350 degrees.  Line an 8 x 8 pan with parchment paper.

After mixing wet ingredients in the food processor or high speed blender, pour the mixture into the flour mixture, and combine thoroughly.

After you mix the aquafaba so that you get little peaks, mix it gently into the flour and wet mixture.  Don't over mix as the brownies won't be fluffy.

I added in some semi sweet chocolate chips, and sprinkled unsweetened coconut on top.  Bake for 33-35 min.
