Artisan No Oil Bread and Pita

Ingredients:

3 cups water
1 1/2 Tbls yeast
1 tsp. salt
6.5 cups flour (any kind you like)  I used 3 cups wheat and 3.5 cups white.

Instructions:

In a large bowl, place luke warm water and yeast, and let it sit until yeast dissolves.  Add in the salt and mix it in.

Add the flour, and mix well.  Cover lightly and let it sit for 2-4 hours or until it doubles in size.

You can make the Artisan by making 1/2 of the dough into an oblong ball, and placing it onto a parchment lined pan, cut slits in the top of the dough.   Then I set it on the stove while the oven preheated to 450 degrees. Bake for 35 minutes.  It will be crusty on the outside, and soft in the middle.

The rest of the dough, I made little balls and rolled them out with a rolling pin.  I place them in a hot skillet and dry fried them until they were crispy.  Maybe 1-1.5 minutes on each side.

Thanks for sharing! I'm curious if you have tried this with gluten-free flour blends and had any luck. Chickpea flour is my favorite option in other dishes, but I've not yet tried to make breads. I've never been much of a baker, but I'm finding it nearly impossible to find baked goods in my local shopping arena that are both vegan AND gluten-free.
