Ingredients:
1 cup dairy free milk (I used vanilla soy)
10 Medjool pitted dates
2 tsp vanilla
1 tsp white vinegar
1 1/4 cup wheat flour, also works with spelt flour
1 tsp. baking powder
1/2 salt
1 cup mashed bananas
1/2 cup dark chocolate chips ( I need to buy vegan chips)
Instructions:
In a blender mix up milk, dates, vanilla, and vinegar.
In a separate bowl place dry ingredients. Flour, baking powder, and salt. Stir it good to make sure all the baking powder gets mixed in. Add the bananas, and the blender mixture and the chocolate chips. Then mix well, but not too much. You want them to be light and fluffy.
I used a non stick muffin tin, but they stuck so next time I will get some cupcake liners.
Bake for 20-23 minutes in a 350 degree oven.
