Basil Pesto With Cashews!

Ingredients:

1 cup cashews (you can also use walnuts, pine nuts etc.
4 garlic cloves
Juice of one lemon, or 2 Tbls
1 cup veggie broth
2 cups fresh basil
2 cups spinach
6 Tbls nutritional yeast

Instructions:

In a food processor or high speed blender, pulse the nuts and the garlic until they are mealy,

Add the lemon juice, basil, and spinach and blend together

Add in the veggie broth and blend until it's smooth.

Cook up any kind of noodle, and pour sauce over the noodles.  Add any vegetable you like.  I added peas because well it had to have more green!  I also sauted some mushrooms.  Delish!
