BBQ Shredded Soy Curls

To preference this recipe, you need to know what soy curls are.  Unlike most meat alternatives, Soy Curls aren’t made from the derived protein, they’re made from the whole soy bean. They’re a whole food … made from cooking & texturing the beans before drying. They are organic & preservative free. Win. Win. Win. Win.  I tried them this past week, and I love them!  They have the meat texture, but best of all the dear husband likes them!  Now they are super hard to find.  I couldn't find them in the grocery stores up here anywhere.  I had to order them from Amazon however, I went to the Butler site and they are cheaper there.  At Amazon they come out to be about 5 dollars a bag, and through the company that makes them they are about 2.80.  Here is a link to Butler.  http://www.butlerfoods.com/orderonline.html


Ingredients:

1 (8 oz) package soy curls
1 small yellow onion, chopped
2 Tbls garlic, minced
2 cups organic ketchup 
2 Tbls molasses
1 Tbls Hickory liquid smoke
1/2 tsp ground mustard
1 tsp. salt (optional)
whole wheat burger buns

Instructions:

Cover the soy curls in warm water to rehydrate for at least 5 mins.  Drain off excess water.  To shred use a drink blender set on the lowest speed.  Fill the pitcher half full with soy curls, blend for 5 seconds.  Check to see that all the soy curls are shredded.  If not run blender on low for a few more seconds.  Transfer shredded curls to Instant Pot.  Shred remaining soy curls, transfer to pot.

Press saute.  Add onion, garlic, ketchup, molasses, liquid smoke, ground mustard and salt to the shredded soy curls.  Stir until all the soy curls are coated.  If it looks like there's not enough liquid for the ingredients to simmer without scorching, add up to 1/2 cup water or vegetable broth.  Cover with lid.  Simmer for 15-20 minutes on low if you have a pot that has a low setting.  Stir occasionally, to prevent it from burning.

Toast your buns, fill with bbq curls and a dollop of sweet relish and a scoop of coleslaw.  Yummy!
