Ingredients:
1 cucumber, diced
1 can black beans, rinsed
1 1/4 cups corn
1 cup cherry tomatoes (cut in half)
1/2 cup packed fresh cilantro, chopped
1 lime
1 avocado diced
Salt and pepper to taste
I also sprinkled Tajin seasoning on top. Lots of flavor!
Place all ingredients in a bowl, and squeeze lime over the top. EAT! Or let it sit in the fridge for a couple of hours to let it blend. I couldn't wait.
