Black Bean Burger

Ingredients:

2 cups of cooked black beans
4 green onions
1 lime (zest and juice)
1/4 chili flakes or powder (optional)
1 tsp ground cumin
1 tsp garlic powder
1 flax egg (1 Tblsp flax, 3 Tblsp water)
1 handful cilantro
salt and pepper to taste
2 Tblsp olive oil to fry, or back in the oven on parchment paper

Instructions:

Add beans to a large bowl.  Mash roughly with a potato masher (but not to much)

Add all the ingredients to the bowl.

Mix well making sure everything is well combined.

You can taste the mixture now and check your seasoning.

Refrigerate for about 15 minutes.  This helps it firm up a little and makes it easier to shape the burgers

The mixture will feel very sticky, but should come together well.  If they don't stick too well together add a bit of water to each patty.  Shape into however many balls and how big you want them.  If they are bigger, this recipe will only make 4.  I made them small, and flattened them out too much.  They didn't hold together too well.  The last 2 were thicker, and it worked better.

If you don't want to fry them, cook them on parchment paper in a 400 degree oven for 10-15 minute or until done.
