Ingredients:
2 cans of black beans rinsed, or (3 cups of homemade cooked black beans)
1 large onion, diced small
3 garlic cloves, minced (I think I used 6!!!)
2 large carrots, cut into 1 inch chunks
1/2 read bell pepper, diced
1/2 yellow bell pepper, diced
2 large sweet potatoes, peeled and cut into 1 inch chucks
4 cups vegetable broth
2 t. cumin
1 t. coriander powder
1/2- 1 tsp. chili powder
1/2 tsp. salt (I didn't add any)
3 grinds of black pepper
2-3 tsp of liquid smoke (I love liquid smoke!)
Instructions:
In the Ipot saute the onions with a bit of broth or water on the saute mod. Add the minced garlic and cook for about a minute longer until all the onions are soft and fragrant.
Add the rest of the ingredients and set it manually for 5 minutes with a quick release.
Open the lid, stir, and make sure carrots and sweet potatoes are tender.
Remove 2 cups of the mixture and blend in your blender. Add it back to the soup. This will make it a bit thicker when you stir it up!
Add some chopped cilantro, scallions, or avocado on top. Serve with baked tortilla chips!
