Morning Blueberry Muffins

Ingredients:

1 1/2 cups ripe bananas smashed
1/3 cup plant milk (I used soy)
1/2 cup maple syrup
1/2 tsp apple cider vinegar
2 cups whole wheat flour
3/4 tsp. baking soda
1/2 tsp salt
2 tsp. cinnamon (I love Saigon cinnamon)
1/4 tsp. ground nutmeg
1 cup frozen blueberries (I get the organic blueberries at Costco!  Huge berries)

Instructions:

Preheat the oven to 400 degrees

Mix all the wet ingredients in a bowl including the bananas, and all the dry in another bowl.

Mix the two bowls together, and fold in the blueberries.

Use cupcake liners in a muffin tin, and fill each liner 1/2 way.

Bake for 25-30 minutes.  My oven runs hot, so mine baked for 20 minutes.

Let sit for 10 minutes.  I was so hungry that I couldn't wait.  When I tried to peel the paper off it stuck to the muffin and tore them up.  Later after they had cooled, the paper peeled right off.  (Live and learn)
