Broccoli and Quinoa Salad

Ingredients:

1 lb broccoli roasted
1 cup quiona uncooked
1/4 cup balsamic vinegar
2 Tbsp. pure maple syrup
2 Tbsp. Dijon mustard
1 lemon (juice)

Instructions:

Cook the quiona according to package directions (I used my Ipot OF COURSE)  :)

Preheat oven to 425 degrees.  Cut up broccoli to the same sizes.  On a silpat or parchment paper roast the broccoli for 20 minutes.

Mix dressing of vinegar, mustard, maple syrup and lemon.

When broccoli is done put it in a food processor and pulse until it's tiny in size.  Don't over blend, you don't want broccoli mush.

Place in a bowl with the quiona and pour dressing on top and mix.  YUM!
