Broccoli Casserole

Ingredients:

1 lb of broccoli
3-4 cups of rice (I used rice with lentils already in it)
1 red bell pepper chopped
pepper and salt to taste

Vegan Cream of Chicken Soup

1 lb tofu
2 tsp better than bullion no chicken base
2 tsp. curry powder
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1/4 cup unsweetened soy milk or water or any other type of non dairy milk

Wash and cut broccoli into bite size pieces, chop the bell pepper and cook any kind of rice you want.
Mix these three ingredients together.

In a blender mix the other ingredients and pour over the broccoli mix.  Mix it all together.

I also sprinkled some nutritional yeast over it and mixed that up.

Put it in a 9x13 inch pan, I also sprinkled panko over the top,
and bake at 400 degrees for 30 minutes.
