Brussel Sprout and Cranberry Salad


1 pound raw brussel sprouts
2 cups quinoa cooked
1 cup dried cranberries
1/4 cup pecans


1/4 cup fresh squeezed orange juice
2 TBLS balsamic vinegar
1/4 cup olive oil (I didn't use any)
1 Tbls pure maple syrup
zest from 1 orange


Wash brussel sprouts well, cut the ends off.

Slice them thinly with a knife or a mandolin.  Watch your fingers!!!

Place in a bowl with all the ingredients and toss until everything is coated.
