Cabbage Soup

Ingredients:

1 whole cabbage
1 cup chopped celery
1 cup onion, diced
8 cups water (I used vegetable broth)
1 beef or chicken bouillon (I used better the bouillon equivalent to 1 cube)
30 oz tomato sauce
1 Tbsp brown sugar (I used coconut palm)
1/4 ketchup

Instructions:
Cut cabbage in half, then cut out the hard core at the bottom (discard or save it for vegetable broth homemade)  Chope remaing cabbage and set aside.

Line a large pot with a thin layer of water or vegetable broth and saute cabbe, celery, and onion until tender.  Add water, bouillon, plus salt and pepper to taste.  Add tomato sauce, sugar, and ketchup.  I added 2 cups of cooked rice, and it got pretty think so I added more water.  I also added greens (spinach)

I highly recommend this book as well.
