Cauliflower Curry (Pick Up Limes)

Ingredients:

1 head of cauliflower cut up into bite size pieces                 
1 onion chopped
3 cloves of garlic
1 Tblsp curry
1/2 Tblsp turmeric
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp coriander
1 tsp cinnamon
1 tsp. salt (I didn't use any, and it was fine without it.)
1 can coconut milk (I used lite)
1 can lentils  (I cooked my own in the instant pot)
1 can diced tomatoes
10 cherry tomatoes (optional)
2 large handfuls of spinach

Instructions:

After chopping cauliflower into bite size pieces, you can sprinkle with oil (I don't use oil) then sprinkle with a tsp of garlic pwd, and onion pwd, and place in a 400 degree oven for 40  minutes until golden brown.

In a large pot, place the chopped onion and cook until tender.  Splash some water on them if it gets too hot.  No oil! 

Add the garlic, and all the other spices and cook until fragrant.

Add in the tomatoes, coconut milk, lentils and spinach, and let it heat through and until the spinach wilts.  Add in the cauliflower when it's done.  Serve over rice.
