Chewy Lemon, No Sugar, No Oil Cookies

Ingredients:

1 cup rolled oats
1 cup oat flour
1/2 quick oats
10 dates
1 cup unsweetened applesauce
1 1/2 tsp. apple cider vinegar
3/4 cup roughly chopped walnuts
2 Tbls. lemon zest
1 tsp vanilla
1/2 tsp baking soda
pinch salt
2 tsp. cocoa powder

Instructions:

Preheat oven to 275 degrees

Soak the dates in water for 20 minutes

Mix the oats, the oat flour, soda, salt, walnuts, and zest in a large bowl.

After the dates have soaked, place in the blender with the rest of the wet ingredients, and blend until you have a paste.

Use a silicone mat or parchment paper on a cookie sheet.  Roll dough into golf ball size balls, flatten slightly.  Bake for 35-45 minutes.  Baking them slow in a cool oven helps so they are chewy and not dried out.
