Chickpea Flour Omelette

Ingredients:

2/3 cup water
1/3 cup chickpea flour
1 Tbls ground flax seed
1 Tbls nutritional yeast
1/2 tsp. baking powder
1/4 tsp black salt (gives it an eggy flavor)
1/4 tsp pepper
1/8 tsp salt (I didn't use this as I already used black salt)
1 tsp garlic pwd

Instructions:

Throw all the ingredients into a high speed blender.

Water saute whatever vegetable you like.  I used mushroom, a small amount of sweet onion, and some yellow bell pepper.

In a none stick pan pour the egg mixture in.  I added a touch of oil as I didn't want it to stick.  Very little.  Cook on the one side until the top looks done.  It will bubble, but just cook until it feels non sticky to the touch.  I then flipped it so that it would get a crispy texture to that side.

Pull it off the pan, and then put the veggies on one half, and fold it over.

I had this for dinner, but really you could have it anytime of the day.
