4 bananas the more spotted the better=sweet
2 1/2 cups oats
1/4 cup coconut sugar
1/4 cup cacao
1/4 cup creamy natural peanut butter
1/4 cup cacao nibs
2 Tbs chia seeds +6 Tbs water
1 Tbs baking powder
2 tsp. vanilla
1 tsp. apple cider vinegar
1/2 tsp salt
Instructions:
Preheat oven to 350 degrees
Mix the chia (and you can use flax) in a bowl with the water and let sit.
Blend 2 cups of oats in a high speed blender or food processor until it's the consistency of flout.
Mash up 3 bananas
In a large bowl mix all dry ingredients ie 1/2 cup whole oats, oat flour, sugar, baking powder, salt
In the same bowl that you mashed up the bananas, mix all the wet ingredients ie, vanilla, vinegar, and chia.
Slowly mix dry and wet together and cut up the last banana and carefully mix it in.
Place batter into silicone cups or use paper liners. Don't use oil to grease your pan.
Bake for 35-40 minutes
Makes 12 muffins
