Chocolate Chip Cookie Bars

Ingredients:

2 Tbls solid coconut oil
2 Tbls almond milk or other non dairy milk (unsweetened)
1/4 cup coconut palm sugar or brown sugar
1 Tbls vanilla extract ( 2 tsp for a less intense flavor)
14 tsp salt
3/4 cup oat flour (gluten free if needs be) I just through oats in my blendtec
3/4 cup almond flour
1/4 cup raw sugar
1/3 ro 1/2 cup mini chocolate chips

Instructions:

Melt the coconut oil by heating in a pan or bowl.  Wisk in the almond milk, coconut sugar and vanilla until well combined.

Add the flours, salt, and raw sugar and mix.  Taste and adjust sweet if needed or add more flour or oil for a soft stick, but not too sticky dough.  Do not add too much flour as the dough will dry out as they chill.  Fold in the chips and mix.

Press onto a parchment sheet and shape into a 1/2 inch thick rectangle about 8-7 inches in length.  ( I just put the parchment paper in a a little loaf pan.)  Refrigerate until set.  

These are yummy, but remember it's only a treat.  :)
