Coconut Flour Banana Bread

Ingredients:

1 cup coconut flour
1-1/2 tsp of ginger or cinnamon or both
3/4 tsp baking soda
1/2 tsp salt
1-2/3 cups of mashed ripe bananas (3-4 large bananas
1/2 cup honey or pure maple syrup
4 flax eggs
2 tsp vanilla
1/4 cup unsweetened applesauce

Instructions:

Preheat the oven to 325 F, line a 9x5 loaf pan with parchment paper.

Mix 4 Tbls of ground flax with 12 Tbls of water and set aside for 10 minutes

Mix all the dry ingredients in a large bowl, and set aside.

Mix wet ingredients including the bananas in a small bowl.  After the flax has been sitting for 10 minutes mix into the rest of the wet ingredients and stir well.

Pour the wet ingredients into the dry and fold together.  Careful not to over mix.  You can also add chocolate chips (vegan of course) or nuts to the mix.

Pour batter into the loaf pan, and cook for 55-65 minutes.  Cool for 15 minutes
