Eggless Frittatas

Ingredients:

2 cups chickpea flour
1 tsp. baking pwd.
1 tsp. salt
1/4 nutritional yeast
3 cups of assorted veggies.  I used 1 cup broccoli, 1 cup bell peppers, 1 cup mushrooms, and a handful of kale.  You can use whatever you have.
1/2 cup green onions
1 tsp. garlic pwd.
1 tsp. smoked paprika
1/3 cup veggie blend.  It's a spice that I get at a grocery store here.  Kind of like lipton onion soup mix. 

Instructions:

Preheat oven to 400. 

Mix the first 4 ingredients in a bowl and mix it with 1 1/2 cups water.  Set it aside.

Chop up veggies, and fry them in a frying pan without any oil.  Let them cook down.

You can grease a muffin tin, or use liners.  I don't use oil, so muffin liners for me. 

Bake for 30-35 minutes.  Make sure they are done by putting a toothpick in and it comes out clean.
