Enchilada Pie (my recipe)

Ingredients:

Corn tortillas 6 inch ones
Corn
Canned Black beans (I spiced them up with a touch of Tajin)
Rice (Cooked)
Onion
Dillons Cheese Sauce (under sides on the blog)
Salsa
Cilantro
You could also put in some shredded soy curls, and enchilada sauce, or canned tomatoes.
Green Chilies (Make sure to check the temperature, because I bought mine, and didn't even notice they were the hot ones!!)

Instructions:

The reason there are no amounts is because I just threw as much in as I thought my husband and I could eat, with a few leftovers

Anyway, I broke the tortillas in half, and placed them in my instant pot a layer at a time, then I layered everything else on top of them, then more tortillas, corn, black beans, rice etc.

I used an instant pot, but used the crockpot setting.  If you don't have an instant pot, use your crockpot!  I cooked it on high for 1 hour, and 3 hours on medium.
