Fabulous Air Fried Onion Rings

Ingredients:

1 sweet large onion
1 1/2 cups of almond or soy milk (I used soy)
3 tsp apple cider vinegar
1 cup flour
2 Tbls. cornstarch
1 cup of buttermilk mixture used for soaking
1 cup panko bread crumbs
1 Tbls. corn meal
1 Tbls. nutritional yeast
1 tsp. garlic powder
1 tsp. onion powder
Salt and pepper to taste

Instructions:

Preheat the oven to 425 degrees

Slice the onion about 1/4 inch thick and separate into rings.

In a bowl add the 1 1/2 cups milk and add the vinegar to it to make it into buttermilk.  Add the onions to the milk and let them soak for an hour or more.

When they are done soaking, drain off 1 cup of the milk and put it in a bowl with the flour and cornstarch.  I had to add more milk to make it into a thinner consistency.

In another bowl mix the panko, nutritional yeast, spices, and corn meal.

Dip the onion into the batter and then into the bread crumbs.  Shake off the excess.

Put them on a pan lined with parchment paper and place in the oven and cook for 20 minutes.

If you have an air fryer, cook at 400 until done.  Watch so they don't burn.  It took about 15 minutes in mine.
