Green Lentil Sloppy Jane's

Ingredients:

1 cup of french green lentils (they are smaller than the brown ones)
4 cups of water
1 medium onion chopped
1 large red bell pepper
2 large garlic cloves minced
2 1/2 Tbls chili powder
1 1/2 tsp smoked paprika
3 Tbls tomato paste
1 1/2 cups tomato sauce
1 Tbls pickle juice
2 tsp Worcestershire (vegan)
3 Tbls yellow mustard
3 Tbls pure maple syrup

Instructions:

Boil 1 cup of the lentils in 4 cups of water.  Takes about 20-25 minutes, or until soft.

In a frying pan, place onion and garlic and saute in veggie broth until soft.  Add the red pepper, and saute for another 5-7 minutes.

Add the spices, and stir to make sure the veggies are coated.

Add the tomato paste, tomato sauce, pickle juice, Worcestershire sauce, mustard and pure maple syrup.

When the lentils are soft, add them to the pan with the sauce, and let it all heat up.  Serve on a heated bun, with pickles and any sides that sound good.
