Cream of Broccoli Soup

Ingredients:

3/4 cup cashews
2 tsp olive oil (I don't use oil at all.  I just sauté in water)
2 medium onions, diced
2 stalks celery, chopped
3 carrots, chopped
3 cloves garlic, minced
16 oz broccoli ( about 7 cups packed)
6 cups of water, divided
1 1/2 tsp salt (I just salted to taste)
freshly ground pepper

Instructions:

Place cashews in a small bowl, cover with water.  Soak for at least 30 minutes or overnight.  (I heated water in my tea kettle to boiling, and poured it over the cashews)  You can also soak overnight, but if you have a high speed blender they don't have to soak long.  

Add oil to a large pot over medium high heat.  Once hot add onion and a pinch of salt and sauté for about three minutes.  Add celery and carrots and sauté for another five minutes, add garlic and broccoli and sauté for another 5 minutes.  

Add 5 cups water, salt and pepper.  Stir and bring mixture to a boil.  Once boiling, reduce heat to low and simmer, covered, for 15 minutes.
