Potato Pancakes

Ingredients

Mashed potatoes.  (I used some leftovers.  I just eyeballed it.  I love this recipe, but really don't have specific measurements.  I had made 7 of them, and ate them all!  lol)

Flax egg 
1 Tbls ground flax
3 Tbls water
Mix this together, and let stand for a couple of minutes until it's got the consistency of egg whites.

Mix this in with the potatoes and mix.

Form the potatoes into balls and smash to the size you want.  

Cook in a 400 degree oven on parchment paper until they are crispy.  I flipped them the first time, and they were crisp, and let them crisp up a bit more on the other side.  The second time I made these they stuck to the parchment paper and where not quite done.  So if they stick leave them until they are crispy and will flip with no problems.
