Instant Pot Nacho Cheese Sauce

Ingredients:
2 cups potatoes cut into small cubes
1 cup onion diced
1 cup carrots, diced
1/2 cup raw cashews
2 cups water
1/3 cup nutrition yeast
1 Tbls Dijon mustard
1/4 cup fresh lemon juice
1 tsp salt
1/2 tsp smoked paprika (I used the plain)
1/4 tsp chipotle pepper powder (I used liquid smoke)
1/3 cup soy milk to thin optional

Instructions:

Place potatoes, onions, carrots, cashews and water into instant pot and set manual for 3 minutes.  Let the pressure come down naturally for 10 minutes.

Use a slotted spoon to transfer veggies and cashews to a high speed blender.  Add nutritional yeast, mustard, lemon juice, paprika and chipotle powder, then blend on high until smooth and creamy.  Add water from the veggies to thin, and soy milk if it is still too thick.  I didn't add any.

After it was done, I put some diced tomatoes into a bowl.  They were processed with chipotle, so they have a kick to them.  Then I poured the sauce over the top.  You could also add some hot sauce to it.  

Yummy!!!!
