Jackfruit BarBQue!

Ingredients:

Two 20 ounce can jackfruit in water or brine (if it's in brine, try to rinse it really well), cut the hard core out.
1 1/2 cups bbq sauce
1 onion
1 green bell pepper seeded and diced

Instructions:

Rinse the jackfruit thoroughly.

Place all the ingredients in a slow cooker and cook on medium heat for 4-5 hours.  Jackfruit will begin to fall apart and have the consistency o pulled pork.

After cooking for 4-5 hours, use a fork to pull apart the fruit and stir thoroughly.

Turn the slow cooker to low heat and cook for another 1-2 hours.

Serve with your favorite cold slaw, and buns.  I also had some Bushes vegetarian baked beans!
