Jammed Packed with Veggie Curry

Ingredients:                                                                             

1 pound broccoli  chopped
1 large onion  chopped
Carrots as many baby carrots as you like chopped
1/2 red pepper
1 pound mushrooms
1 cup frozen peas
4-6 garlic cloves
1 inch ginger
1 can full fat coconut milk
1 cup noodles, any kind will do.  (I used  just brown rice)
Curry to taste and cayenne to taste
Salt and pepper

Instructions

On the stove top heat up a pan  and when it's hot, toss in the onions and a bit of water.  Water saute until they are caramelized and tender.  Add in the carrots and the red bell pepper and cook for another 3-5 minutes.

Add in the broccoli, garlic and ginger.  If you add the garlic at the beginning and cook it with the onions, it loses it's flavor.  So adding it now really brings out the garlic taste.

Add in the mushrooms and let them cook down a bit.  Add in the coconut milk and the peas and let it simmer.

You can add in noodles here, or serve it over rice which is what I did.
