Mediterranean Kale Flat

Ingredients:

1/2 bunch of kale
2 scallions
2 cloves of garlic
1 tsp garlic powder
1 tsp onion powder
Sun dried tomatoes  to taste
1 flour tortilla (any kind you like)
2 Tbls hummus

Instructions:

Heat up a pan to high heat.  Throw in the onions and garlic, and cook until fragrant.

Add in the kale, spices and and sun dried tomatoes, and cook until kale is wilted down.

Remove from the pan, and rinse out the pan.  (I use those copper pans, and I love them because they rinse out and nothing sticks)  Then heat the pan back up, and put in the tortilla.  Cook on both sides until it's browned and crispy.

Remove tortilla, spread on the hummus, and put the kale mixed on top.  Eat!
