Lentil Loaf, Simnett Nutrition

Ingredients:

Lentil mix
2 cups cooked french lentils (I used brown lentils, and they worked just fine)
1 cup oat flour (I used my high speed blender)
1/2 cup walnuts ground up (again, high speed blender)

Saute in veggie stock
1 carrot
1/2 purple onion
2 celery stocks

Sauce mix
1 Tbls tahini
2 Tbls tomato paste
1/2 bbq sauce
2 tsp Worcestershire sauce vegan of course

Spice mix
1 tsp salt (I used a no salt seasoning)
1 tsp cumin
1 tsp garlic pwd
1 tsp. onion pwd
1 tsp thyme  (I didn't have any so I just added more no salt seasoning) (any spice of your choice would work)

Frozen
1/2 cup peas

Instructions:

Preheat the oven to 350 degrees

Mix all the ingredients together, place in a non stick loaf pan, or silicone.  I used a loaf pan, with a strip of parchment paper.

Bake for 35-40 minutes

While it's cooking, lick the spoon and bowl!  So good!
