Lentil, Sweet Potato Curry

Ingredients:

2 cups sweet potato (You can either cook them whole, or cube them and roast them)
1 cup of brown or green lentils
1 onion (chopped)
1 celery stalk (chopped)
3 garlic cloves
1 carrot stalk (chopped)
1 Tbsp or more of ginger (I love ginger!)
2 Tsp. yellow curry powder
1/4 tsp. or more of cayenne
3/4 tsp. salt (I always add it at the table.
1-2 cans of coconut milk

Instructions:

Roast the sweet potato until soft.

Cook the lentils until they are tender

Pan fry the onions, garlic, and ginger in water until tender.  Add in the celery and the carrot, along with the spices and cook everything until softened and fragrant.  Add in the sweet potato and the coconut milk.  I only used 1 can of coconut milk and then I added in a cup of veggie broth.

Blend with an immersion blender or place in the regular blender and blend until smooth.

Add in the lentils.
