Marinara Sauce

Ingredients:

6 galic cloves, minced
1 onion, diced
3 carrots, diced small
1/4 cup low-sodium vegetable stock, for sauteing
1 cup fresh basil, chopped
3 Tbls tomato paste
1 Tbls dried oregano
1/2 tsp. sea salt
1/4 tsp black pepper
Two 14-ounce cans crushed tomatoes
1 cup water
1 Tbls maple syrup or agave


Instructions:

In a large pot over, medium high heat, saute the garlic, onion and carrots in the veggie stock until tender.

Add the basil, tomato paste, oregano, red pepper flakes, salt and pepper.  Cook over low heat for 5 minutes.

Pour in the crushed tomatoes, water, agave, and wine.

Bring to a boil, then lower the heat to a simmer.  Simmer for 1 hour, uncovered, stirring occasionally.
