Meatball Subs

Ingredients:

For the meatballs

1 15 oz can black beans
1 cup rice
1/2 cup oats
1 tsp. garlic pwd
1 tsp. onion pwd.  (my hubby doesn't like uncooked onions in things, and I was too lazy to cook some up)  lol  The powder worked fine
A few Tbls water depending on how dry your mix is.

Water Saute:
Onion, however much you like
1 green pepper
Mushrooms again however much you like

Instructions:

Place drained and rinsed black beans in a bowl, and smash them up with a fork.

Add in rice and oats, and onions if using and garlic powder and water. 

Form into balls the size of golf balls

Bake on parchment paper in a 350 degree over for 30 minutes, or until crispy.

Place your veggies on and then the meatballs, on your favorite toasted bun, and put your favorite marinara over the top.
