No Tuna Sandwich

Ingredients:

1 15oz can of chickpeas
2 celery stocks chopped finely
onion, chopped finely to taste
2 Tbls  sweet pickle relish
2 tsp nutritional yeast
1 Tbsp soy sauce
2 Tbsp mayo (fat-free)


Instructions

In a bowl, mash the chickpeas with a fork.  Add the rest of the ingredients.  Add salt and pepper to taste.  Add shredded carrots to the mix if you would like.

Toast some whole wheat bread, Add any veggies on the sandwich that sounds good.

If you miss the fishy taste, use some kelp if you like and to taste.

This was wonderful! I've never really liked chickpeas, and now I know why--they remind me in smell of tuna. Well, mixing it up like tuna changed everything! My husband is slow to come along with the idea of ditching meat, but he agreed that was good and is willing to take it to work instead of stinky, smelly tuna.

Do you use egg tee mayonnaise?

I do! Veganase? Can't spell, and I'm too lazy to go look! LOL You could also make a tofu mayonnaise, and I think that is in the Plantpure Nation cookbook, or I'm sure you could find it on pinterest or youtube.
