Pad Thai! Vegan of Course!

Ingredients:

2-3 servings of rice or pad thai noodles
1/2 a package of extra firm tofu drained and squeezed to remove water

Sauce ingredients
4 garlic cloves minced
2-3 Tbls sugar
2 Tbls peanut butter
2 Tbls tamarind paste (I couldn't find any anywhere, so I got Pad Thai sauce)
2 Tbls rice vinegar
1 cup water
1 cup peanuts
1-2 cups bean sprouts
1/2-1 cup cilantro (I almost forgot to add this, and it was soooo much better with cilantro!)
4 green onions
Sriracha to taste (too hot for me!)
Juice of 1 lemon

Instructions:

Pan fry some tofu.  I seasoned it with a bit of tamari, garlic powder, and onion powder.  It will stick so I used a smidge of coconut oil.

Place noodles in a bowl of warm water and let soak while you are preparing other ingredients.

Place the sauce ingredients in a bowl or food processor and mix up.

If you are using peanuts crush them up.  I didn't use any, and it was still good.

Add the cilantro into the sauce, and then also use some for garnish when you plate it up.  A person can never have too much cilantro!

In a large pot add the noodles, sauce, green onions, and bean sprouts.  Cook on heat until the sauce is absorbed by the noodles.  You may have to add more water until all the noodles are cooked through. I just eyeballed it and kept tasting it!  :)

Plate it up, and garnish with more green onions, cilantro, peanuts, and lemon.
