Polenta and Stir Fry Veggies

Ingredients:

1 tube of polenta

Vegetables:

Mushrooms
Onions
Mushrooms
Zucchini
Yellow Squash
Anything that sounds good!


Marinade sauce:

2/3 cup olive oil ( I used half, and probably could have gone without )
1/3 cup balsamic vinegar
1/4 cup minced onion
1 Tbls chopped fresh basil
1 tsp minced garlic
1/2 tsp kosher salt
1/4 tsp fresh ground black pepper

Instructions:

Slice and cook polenta.  Cook on a pan covered with parchment paper at 350 until hot and season with salt and pepper

Combine ingredients for marinade and mix well.

Marinade cut vegetables for 3-4 hours and grill or brush marinade onto vegetables as you grill on kaboob sticks.  (You can also stir fry them, which is what I did.)

Makes 1 cup of marinade
