Pumpkin Chocolate Chip Oatmeal

Ingredients:

1 cup water
1 cup soy milk or any plant milk
1 cup oats (long cooking)
1/2 cup pumpkin
1 banana (mashed)
2 Tbls chia seeds
2 Tbls pure maple syrup
1/2 tsp cinnamon or 1/4 tsp pumpkin pie spice and 1/4 tsp cinnamon

Instructions:

Put everything in a pot and bring to a boil.  Stir continuously to get a creamy texture.

Optional: top with vegan chocolate chips (live a little) and extra plant milk
