Quesadilla on a Panini Maker

Ingredients:

Tortillas, however many you need
Black beans (I used what was left over in my fridge)
Soy Curls (I only cooked 1/2 cup since I was the only one eating)
Rice for your choice (I used wild with lentils in it)
Cilantro chopped to taste (I didn't have any)  :(
1 tsp cumin
1 tsp chili powder
1/2 tsp  salt
1 tsp poultry seasoning

Instructions:

I made this just for me, so if you make it for the whole family increase the ingredients, and spices to taste.

First soak the soy curls in boiling water for 5-10 mins.  After they are soaked drain off the water and add spices. Poultry seasoning, cumin, salt, chili powder.  I think next time I will add a bit more poultry seasoning.  If you aren't familiar with soy curls, they have no flavor.  They feel like chicken when you chew on them, so if you want a more chicken flavor soak them in Better Than Bullion No Chicken Base, and add more poultry seasoning.  Then in a 400 degree oven, back them on a cookie sheet for 15 mins.  I didn't turn them over because I still wanted them to be moist and not dried out.

Mix your beans with more seasonings.  You don't have to cook them if they are canned because they will get hot on the panini pan. If you don't have a panini maker, you can cook them in a pan, and just cover it with a lid until ingredients are hot.  Then let the tortilla crisp up without a lid.  Cast iron works great!  Be careful when you turn it over as there is no cheese to hold it all together.

Use any kind of rice you would like and layer your ingredients on the tortilla.  Rice, beans, soy curls, cilantro. You can either fold it over or use a top tortilla.  However, it would be hard to flip in a regular pan.

Serve it plain, or with salsa.
