Quick Chili

Ingredients:

2 cups pinto beans (I cooked my own in the instant pot.  I used a cup of dry, and it made 2 cups cooked)
1 can black beans rinsed
1/2 red onion chopped
1 green pepper chopped
4 cloves garlic  I use a garlic press
2 15 oz cans crushed tomatoes  I put mine in the blender, as the hubby doesn't like chunks of tomatoes.
3 4 oz cans tomato sauce
2 Tbls tomato paste
2 cups of water
1 cup of frozen corn
1 Tbls chili powder
1 Tbls cumin
2-4 drops of liquid smoke

Instructions:

The pinto beans took 1 hour to cook in the instant pot (love that thing)

Water saute onion until brown, add in the bell pepper and garlic, and cook until tender and fragrent

Add in tomatoes and sauces, and beans, let it come to a simmer.

Add in the corn and let it come up to boil and boil it until the corn is cooked through.

Don't forget to add in the liquid smoke.

I ate mine over riced cauliflower, but it would be good over rice or a baked potato.  I also spritzed some lime over mine.
