Sofritas

Ingredients:

Sauce:

2 Chipotle in Adobo plus 3 Tb adobo sauce
2 cups water or broth (I used water) Use 1/4 cup to make the paste, and use the rest after pouring sauce onto the tofu.
1 Tbls cumin
2 tsp oregano
1 tsp salt (I didn't use)
3 Tbsp. lemon juice
1 Tbsp sugar (I used palm)
1 poblano pepper (roasted on open flame, seeds and skin removed
2 Tbsp. tomato paste
2 garlic cloves

Tofu

1 block tofu (press the water out by placing in some paper toweling, and then placing something heavy on top, and let it sit for 10-15 minutes
2 Tbsp oil (I used water and it worked fine if you use a nonstick pan)

Instructions:

Put all the ingredients for the sauce in a blender, and blend until it makes a smooth paste.

Slice the tofu into steaks, and fry them in a pan until golden brown on both sides.

Chop them up into fine chunks, or little pieces.  Pour the sauce on top, then add the rest of the water and let it come to a boil, and it will boil down, and make this really saucy! 

You can use it in a burrito bowl, or in a wrap!
