Soy Curl Noodle Soup Jill McKeevor

Ingredients:

Carrots Chopped and however many you like
1/2 onion diced
Mushrooms again, however many you like
3 stalks of celery
1 1/2 cups soy curls (I just used an 8 oz bag, but then you have to add more liquid)
8 cups of broth (I used 4 veggie and 4 better than bouillon no chicken broth)
1 package low mein noodles broken up, (I used what I had on hand)
Peas (I just threw some in!)
I'm sure it would be good with some corn in it as well
2 handfuls of spinach (I FORGOT!  LOL)
2 tsp. soy sauce
1 tsp. powdered mustard
1 tsp onion powder
1 tsp. turmeric

Instructions:

In the IPot on saute mod, cook the carrots, celery, onion, mushrooms along with some broth.  Cook until tender.

Add the rest of the ingredients and bring to a boil.  Put a lid on it, and turn off the IPot.  Let it sit for 6 minutes.

This soup is so good!
