Spaghetti With Marinated Tofu

Ingredients:

1 bottle spaghetti sauce (no oil, and no sugar added)
1 can tomato paste
Saute mushrooms as many as you like
1/2 onion saute
1 pkg tofu (extra firm)

Marinate:

2 Tbls mustard
1 Tbls herbs of choosing (I used oregano, and basil)
1/3 cup red or white wine vinegar
3 garlic cloves, minced
Spaghetti, or zoodles (zucchini noodles)

Mix the marinate ingredients together.  Cut the tofu into 1/2 squares.  Pour marinate over tofu, and let it marinate for 4-6 hours.

Cook sauce and paste.  Add mushrooms and onion.  Pour off the marinate of the tofu, and put the tofu into the sauce as well.  Cook until bubbly.

Take zoodles and cook in a frying pan with a bit of water, 1 tsp garlic powder and salt to taste.  Cook to desired softness.

Serve sauce over spaghetti or zoodles and top with a bit of nutritional yeast.
