Special Occasion Sweet Potatoes

Ingredients:

1 can full fat coconut milk
1 cup brown sugar
9 cups sweet potatoes (I used yams, as they are my favorite)
1 tsp vanilla
1 tsp. cinnamon
1/2 tsp nutmeg

Topping

2/3 cup brown sugar
5 Tbls vegan butter
1/2 flour
1/4 tsp. salt
1 cup pecans or walnuts

Instructions:

Scrub the potatoes well, and poke holes in them.  Preheat the oven to 400 degrees, and bake until soft.  I love baking them this way because they caramelize and become sweet.  When they are done, let them cool, and remove the skins. 

In a large bowl, combine coconut milk, and brown sugar.  Add the spuds, and mash it all with a mixer until they are creamy and smooth.

Preheat the oven to 350 degrees, and place the potatoes in a cake pan and spread them out. 

Combine other ingredients together, until the mixer is crumbly.  I added some oats because I added too much butter.  Ooops!  It was so good though.  Then mix in the nuts, crumble the mixture over the top the the potatoes, and place them in the oven for 35-45 minutes until the top is golden brown.
