Stuffed Eggplant

This recipe would be good in squash as well!

Ingredients:

2 medium eggplants
1 can of white beans (or any bean for that matter)
1 zucchini chopped
3 large mushrooms chopped
1 medium onion chopped
1 - 2 garlic cloves
3 ripe tomatoes
1/2 roasted red pepper
Oregano, basil, and thyme to taste I used fresh from my garden

Instructions:

Bake eggplants in an oven on broil for 30 minutes and turn over half way through.  When cool enough to touch, cut in half, and mash up the middle.

Water saute onions with garlic until translucent.  Add the zucchini, and mushrooms.  Cook until fragrant.

Add in the spices, and let simmer.

Add in the tomatoes, and let them cook down a bit until they are soft.

Add beans and heat through.

Spoon mixture into the eggplant halves, top with panko flakes and bake in a 350 degree oven for 30 minutes.
