Stuffed Sweet Potato

Ingredients:

10 Sweet potatoes cut length wise  ( I didn't do 10 as it's only for my husband, but it would be great for a party! )  The sweet potatoes I got look like yams.
1 can black beans
Canned or frozen corn, as much as you want
5 cloves garlic
2 tsp. cumin
1 tsp. salt
1 bunch cilantro or parsley chopped
1 lime

Instructions:

Place potato halves on a broiler pan and cook in a 375 degree oven until done.  Mine took about an hour.  They will be oozing with sugar goodness.

Carefully scoop out the middles hot hot hot!  I used a towel to handle them.  Place insides in a large bowl.  Add black beans, corn, garlic, cumin, squeeze lime over the top.  While you are preparing these, put the skins in the oven and let them crisp up for about 10 minutes.

Heat the filling to hot, and re-stuff ( Is re-stuff a word? )  Hahahaha
