Sweet Potato Muffins

Ingredients:

2 cups whole wheat flour
3/4 cup date paste or 1/2 brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Tbsp ground cinnamon
1 cup sweet potatoes, cooked and mashed
1 cup unsweetened applesauce
1 cup vanilla soy milk, or any other non dairy milk
1 Tbsp apple cider vinegar
1 cup of raisins (my family hates raisins, so I used less than a cup of chocolate chips)
1/4 cup walnuts crushed (optional)

Preheat oven 350 degrees.

Combine all dry ingredients flour, sugar, cinnamon, salt, soda, and baking powder.

Stir together apple sauce, non dairy milk and vinegar in another bowl.

Peel sweet potato and mash with a potato masher until softened.

Add mashed sweet potatoes to the apple sauce, milk and vinegar mixture and whisk together well.

Combine the dry mixture to the wet mixture and stir in raisins or chocolate chips.

Stir thoroughly.

Spoon batter into a non stick silicon muffin pan, or use cupcake liners.

Bake in the oven for approximately for 25 minutes or tops are golden and a toothpick inserted into the center comes out clean.
