Sweet Potato Tortillas

Ingredients:

1 cup of hot sweet potatoes
1 cup all purpose flour

Instructions:

Cook your potatoes whole.  You can steam them, boil them, or instant pot them!  When they are done, take the skin off.  Be careful, they will be hot!!!!

Smash them with a fork and add the flour.  Mix them together and knead them after to make sure all is mixed together.  I had to add a bit more flour because the dough was sticky.

Divide the dough into 6 portions.  On a floured board, roll them out into the size that you want.  I think next time I make them, I will double the recipe so I can make big ones!

Cook them on a hot pan.  20-30 seconds on each side.  When they begin to bubble, you know that the inside is cooked.

When they are done, put a tea towel in a bowl, and put the tortillas one at a time in the towel.  Keep them covered up.  This helps to soften them.  As they get done, put them in the towel.  This will keep them from getting dried out.

Occasionally rotate the tortillas so that the bottom one will be sandwiched in between the others so it will become soft as well.
