Thai Red Curry Sweet Potato Lentil Soup

Ingredients:

1 large onion  ( I only used a quarter of a large red onion )
4 cloves garlic
3 Tbls curry paste or power to taste
6 cups of vegetable broth
2 large sweet potatoes peeled and cubed.  (I left the skin on yum )
1 can 15 oz diced tomatoes
1 1/2 cups of red lentils
1 can coconut milk light or regular
salt and freshly ground pepper to taste
1/4 cup cilantro
I also threw in a couple of handfuls of kale

Instructions:

Saute' onions and garlic in a large heavy pan.  Cook until tender.

Add curry paste (powder), give it a quick stir then add broth, sweet potatoes, tomatoes and lentils. Bring to a boil and cover slightly and cook until potatoes and lentils are soft, about 20 minutes.  If you are adding kale add at the end of the 20 minutes.

Add coconut milk and heat through.  Salt and pepper to taste.
