The Best Tofu Scramble!

Ingredients:

1 lb extra firm tofu
1 small onion
3 garlic cloves minced
2-3 roma tomatoes (I used regular tomatoes and just removed the seeds) chopped
1 tsp cumin
1 tsp paprika
1/4 tsp turmeric
1/4 cup nutritional yeast
1 or more large handful of spinach or kale  (I used kale)
Salt and pepper to taste

Instructions:

Dice onion and mince garlic.  In a large pan using a bit of water and salt saute until onion is translucent.  Add the garlic and cook for about 30 seconds more.

Meanwhile, crumble tofu and dice tomatoes.  Remember to drain and squeeze the liquid out of the tofu. before crumbling it.   Add crumbled tofu and tomato to pan of onions and cook about 10 minutes, stirring occasionally.  Some may stick, but it's normal.

While the tofu is cooking, put the cumin, paprika, and turmeric in a small bowl.  Add 1-2 Tbls water and stir to combine.

Add nutritional yeast and spices to tofu and stir until well combined.  Add greens and cook another 3 minutes.
